Classic tiramisu is an Italian dessert prepared with coffee-soaked ladyfingers and mascarpone cream.
Recipe note: The source recipe does not provide a specific measurement for the espresso.
Ingredients:
– 700 g mascarpone
– 5 egg yolks
– 190 g granulated sugar
– Espresso
– 200 g ladyfingers
– Cocoa powder, for dusting
Instructions:
1. Combine the egg yolks and granulated sugar in a vessel set over a double boiler. Whisk continuously and rapidly until the mixture reaches 64°C (147°F), then keep whisking over the heat for an additional 3 minutes.
2. Let the egg mixture cool down to room temperature. Add the mascarpone and mix until completely smooth, silky, and creamy.
3. Brew the espresso to your desired strength. Briefly submerge each ladyfinger into the coffee, taking it out right away so it does not become excessively soggy.
4. Place a layer of the coffee-soaked ladyfingers across the bottom of a serving dish, then spread half of the mascarpone cream evenly over the top. Layer the remaining soaked ladyfingers over the cream, and finish with the rest of the mascarpone mixture.
5. Transfer the dish to the refrigerator and chill for a minimum of 6 hours, or ideally overnight.
6. Dust the surface generously with cocoa powder immediately before serving.
