Zebra Crepes are soft, delicate crepes with a chocolate zebra pattern and a creamy chocolate filling. Yield: about 8 crepes.
Ingredients
For the Crepes:
2 cups (400 ml) milk
1 cup plus 2 heaping tablespoons all-purpose flour
2 eggs
1 tablespoon granulated sugar
Pinch of salt
1 tablespoon neutral oil
For the Chocolate Batter:
1 tablespoon cocoa powder
1 tablespoon milk
1 teaspoon powdered sugar
For Filling:
Chocolate spread
Instructions
1. Add the milk, flour, eggs, sugar, salt, and oil to a bowl. Whisk until completely smooth.
2. Alternatively, use a blender.
3. Transfer about 1 cup of the batter to a separate bowl. Add the cocoa powder, milk, and powdered sugar, then mix until smooth.
4. Let both batters rest for 10 minutes.
5. Heat a nonstick pan over medium heat. If needed, lightly grease it with a little oil.
6. Transfer the chocolate batter to a squeeze bottle. Pipe thin lines directly onto the hot pan and cook for 5 to 10 seconds.
7. Pour a ladleful of the plain batter over the chocolate pattern. Cook for about 30 to 40 seconds, then flip and cook the other side for about 20 seconds.
8. Stack the cooked crepes while still warm to keep them soft.
9. Spread with chocolate spread and roll them up.
Recipe note: The amount of chocolate spread for the filling is unspecified, and the volume of a ladleful of plain batter is not specified.
